THE BAKERISM uses Nakazawa 47 Fresh Cream directly imported from Hokkaido as a key ingredient of all shortcakes,
to achieve a higher smoothness cream texture and more natural dairy flavour, in exchange, the cream might be rather less resistance to heat. 
You are strongly suggested to bring a cooler bag with you for carrying the cake, or you're always welcome to add one from us in your purchase.
